Scalloped Tomatoes and Okra

16 oz can Whole Tomatoes

1/2 cup Sugar

1/2 TBSP Melted Butter

1/2 TBSP White Vinegar

1 cup or more of Okra (I used frozen)

Salt and Pepper to Taste

Topping

2/3 cup Panko Breadcrumbs

2 TBSP Butter, melted

Mash up the Whole Tomatoes

Add the sugar, butter, vinegar, salt and pepper, and the okra.  Stir to combine all ingredients.

Bake low and slow on 300 for 45 minutes.

Prepare the topping by mixing the Panko breadcrumbs with the melted butter.  Sprinkle over the tomato mixture and bake for an additional 15 minutes or until golden brown.
